Normally I don't make pies to keep around the house. They don't seem to get eaten as much as cookies or cakes, so I usually reserve them for holidays. However, I don't see this as being a problem with this pie.
Here is the recipe for my pie:
Chocolate Chip Ice Cream Pie
1/2 cup chocolate syrup
1/3 cup semisweet chocolate chips
2 cups crisp rice cereal (used Choc. Rice Crispies)
1/4 cup sour cream
1 quart chocolate chip ice cream (softened)
Coat bottom and sides of an 8-inch pie plate lightly with butter.
Combine chocolate syrup and chocolate chips in a small microwave-safe bowl. Microwave on high until hot (about 45 seconds). Stir until smooth. Reserve 1/4 cup of this mixture and set aside.
Combine remaining chocolate mixture and cereal in a medium bowl and mix to coat cereal. Press mixture over bottom and up sides of prepared pie plate. Freeze until firm, about 15 minutes.
Combine reserved chocolate mixture and the sour cream in a small bowl and mix well. Spread 1/2 the ice cream in the prepared pie plate (only works if ice cream is soft) and drizzle 1/2 sour cream mixture on top. Top with remaining ice cream and finish up with the remaining sour cream drizzle.
Freeze pie until firm (about 1 hour).
(Tips: because the sour cream mixture is thicker, it doesn't "drizzle" very well. On the first section of ice cream, I just spread a layer of the mixture over the ice cream. Then I added the second layer of ice cream and drizzled plain Hershey's syrup over the top. This was easier and I was able to make a design, rather than just spreading the mixture all over.)
Here is the finished product:
I must say - this pie was wonderful! I will definitely be making this one again AND it has earned it's way into the Slaughter Family Favorites recipe notebook!
(We had surprise guests stop by at dinnertime - our treasured friends - The Roye's - and they were able to share this treat with us. I'm glad we were able to share this with friends. That made it even better.)
Well, happy National Pie Day everyone! Now I can say I've officially participated!
Have a blessed Sunday,
Debbie
